It’s easy to prepare meals like mom used to do when mom is cooking right next to you.

Just ask Hiba Saab, co-owner of the new Homemade Freshly Mediterranean food trailer.

Just over a month ago, after a year of delay due to the COVID-19 pandemic, Saab opened their shop specializing in Lebanese cuisine with her mother Laila Saab.

The two founded daily on the northwest corner of South Pantano Road and East 22nd Street, amid the remains of an old gas station where the popular local chain Serial Grillers began.

Saab, 39, said her mother had taught her the proper methods of making Lebanese food since she was a child in Beirut.

“I used to interfere with her cooking, but when I was 11 or 12 years old, I got it more serious,” Saab said. “I got good at it eventually. She showed me the basics. “

These years of teaching are reflected in the extensive menu that Homemade Freshly publishes every Tuesday through Saturday outside of its trailer during its opening hours.

Offerings include falafel, dolma, and sweet baklava, a kofta plate, a grilled chicken tawook wrap, and both beef and chicken shawarma dishes.

Saab said shawarma, thin slices of meat fried on a vertical rotisserie, was her favorite food when she was growing up.
