This is how Ray Flores describes the latest project from Flores Concepts, The Monica, a tribute to the founder of El Charro, Monica Flinn. The restaurant will open early next year on the first floor of the Hexagon building in City Park, 40 E. Congress St. in the city center.
The 4,500 square meter restaurant with a 2,500 square meter terrace will have an open show kitchen that dumps its spatulas into the classic American pantry and into the buffet-style dining rooms where the kitchen prepares everything in its pantry.
In the case of The Monica, the kitchen will feature dishes from some of Tucson’s most notable chefs and food personalities, and act as a branded incubator, offering a menu that changes with the season and which family friends drop by.
“We want to bring back a few friends who were lost during the pandemic, businesses that were lost,” said Flores, president of his family’s restaurant business. “It’s a family thing. This is our family and the friends and family of Tucson. “
Flores said he was in talks with a number of prominent past and present Tucson chefs about joining the company, which is run by Executive Chef Danny Perez.
“The Flores family and I speak the same language, and it’s hard work,” said the classically trained Perez, whose career spanned 15 years as the inaugural chef of the JW Marriott Star Pass and most recently as head chef at La Paloma. “This will be a first for Tucson.
