Flores lived a decade in the street from his location on Valencia Road.
“I know this area and there aren’t many restaurants, especially when it comes to grand pianos,” said Flores, who now lives in Benson. “I’m not going to compete with anyone.”
In addition to the wings, Flores said, Flaps and Racks will also serve ribs in the same fashion as Korean grill ribs, as opposed to traditional baby back ribs.
His main barbecue sauce recipe includes chiltepins, but the ribs can be made with many of the sauces he will be using for the wings.
Ranch sauce for dipping is available in coriander and chipotle flavors.
For the more health-conscious, the room next door, also created by Flores, will be dedicated to acai bowls. It will be called Acai Paradise.
“I have two boys,” said Flores. “When we go out to eat, my wife has to be content with anything we want. We end up eating things that aren’t that healthy. That way you have options. “
Flores said if the Flaps and Racks concept works in Valencia, he might consider opening a location in Benson.
“Benson is a small community,” he said. “There’s room for a good place to get a beer and wings.”
