Jeffrey Flores expected the sneeze guards to arrive for his new restaurant last Monday, but a recent COVID-19 outbreak at the factory forced a delay.
So when he opens his twin restaurants in the south on Monday, November 22nd, he will be satisfied with plastic covers.
After waiting months for the equipment to arrive and trying to find enough staff for Flaps and Racks and Acai Paradise at 3253 E. Valencia Road, he and his partner / wife Auxi Navarro didn’t want to be stopped by a sneeze guard.
“It’s a sigh of relief to finally open, but it’s also a little scary,” Flores said late last week, admitting that he still doesn’t have the number of staff he needs. “We don’t have the full manpower and I think it is and will be.”
Flores and Navarro, who are involved in the project along with Flores’ brother Miguel and sister Keila, announced plans for the restaurants in August and had hoped to open by September.
The hiccups in the supply chain and hiring problems pushed the opening back, from a few weeks initially to a few months, until she placed her first order of chilli verde wings at Flaps and Rack or homemade oatmeal and acai bowls at Acai Paradise on accept Monday.

The businesses are across from Flores ‘Los Betos Restaurant, 3216 E. Valencia, Flores’ first Tucson restaurant business that he and Miguel bought in 2000, years after moving to Tucson from his native Puerto Rico.
