She went on the food truck route because she wanted to go where the people were – concerts, Christmas parties, events where thousands of people gathered.

“I was so pleasantly surprised when I started the food truck,” said Ward. “(The clientele) was mostly non-Filipino and they came and they knew Pancit and Lumpia and Adobo. I said, ‘Oh my god, there has to be a niche for this type of kitchen.’ “

Earlier this year, Ward took her grandchildren to the cinema in Park Place for the first time since the pandemic began.

“I was so sad,” she said of the many vacancies in the food court. “I said, ‘What happened to the food court? Here is nothing.’ ”

Almost on a whim, she decided to see how much a place in the food court would cost.

“That started it all and got the ball rolling,” said Ward.

When the opportunity seemed plausible, Ward looked at her loyal social media fans and asked them what they thought of Fiesta Filipina opening a permanent location.

The consensus was almost unanimous.

“I said, ‘What do you think? Is that something I should be considering? ‘ “Ward recalled, adding that the response was overwhelming. “It was, ‘Yes, because there is nothing in Tucson and we have to keep following you. Can you stay in one place? ‘ ”
